Salmon on Cedar Instructions: Oven or Grill Plank Salmon: Soak planks in water for two hours and then oil plank surface with olive oil. Add salmon fillet or steak. Season with salt, pepper, garlic, and lemon. Place plank with salmon directly on grilling surface or aluminum foil or preheat oven to 450 degrees and place on a cookie sheet. Cook until done. Broiler Plank Salmon: Prepare as above and place plank and salmon on a cookie sheet. Cook until done. Approximate cooking time 10 minutes. Finish with a pat of butter and serve on the plank.

When we entertain at the family farmstead, people just rave about our salmon grilled on our cedar planks.  They tell us that it tastes so much better, so much more flavorful, then other salmon on cedar that they have had.  We just thought people were being nice, until one day the light came on.  There was a difference! When we grill our salmon, we just go out to one of our mills that are cutting fresh Maine White Cedar and grab a handful of planks.  We figured, why go through the whole soaking process when our fresh planks are just dripping with natural juices?  Anyway, after a little experimentation comparing the fresh cedar taste to our own dried and rehydrated planks, the taste difference was simply "awesome" as one of the grandchildren put it!

 

We decided to offer the same "just cut" fresh cedar planks to our customers.  So, now when our cedar arrives from the various family owned woodlots around Brooks, we select some of the choicest planks right off the mill and vacuum pack them to maintain the freshness.  We store them in our freezer, pack them in insulated shipping cartons, and expedite them to your door within 48 hours or less anywhere in the country.  We will even add some fresh sprigs of cedar for a garnish.  And we pay the shipping....or at least we figured it into the price so that you would not have to!
